These Spooktacular Cheesecake Swirl Brownies turned out so fun for Halloween! My daughter searched and searched for a fun Halloween recipe that we could try for Family Home Evening and found a recipe that inspired us to make these. We decided we could make it even more simple by using our favorite boxed brownie mix and they turned out delicious.
Spooktaclular Cheesecake Swirl Brownies
inspired by Persnickety Plates
- 1 box of your favorite brownie mix (choose one that can be baked in an 8×8 or 9×9 pan)
- 8 oz. cream cheese
- 1/4 cup sugar
- 1 egg
- 1/2 tsp. vanilla
- orange and purple food coloring
Directions: Preheat oven according to the directions on your brownie mix and spray 8×8 or 9×9 inch pan with cooking spray. Prepare brownie batter according to directions on the package. Reserve 1/4 cup brownie batter. Spread remaining batter into 8×8 or 9×9 inch pan and set aside.
With a mixer, beat together cream cheese and sugar until smooth. Scrape sides. Add in egg and vanilla and mix until combined. Separate cream cheese mixture into two bowls. Use food coloring to make one orange and one purple. Drop spoonfuls of colored cream cheese mixture on top of brownie batter and spread slightly to cover brownie batter completely. Drop the remaining 1/4 cup of brownie batter by spoonfuls on top of cream cheese mixture. Use a knife to make the swirl patterns throughout the cream cheese layer. You can see the swirl patterns we made in the picture below.
Bake according to the directions on your brownie package. I baked mine for about 45 minutes and it turned out great!
Cool, cut, and then serve. I’m sure your family and friends will love this spooky Halloween treat.
