We love this fast and easy Creamy Spinach and Tortellini. It is delicious and can literally be on the table in 30 minutes. Now that is my kind of dinner lately. Our weeknights have been full of soccer practice and end of school year activities and our dinners need to be fast. This is one that makes it onto our dinner rotation often.
I found this recipe a couple of years ago and have seen it on multiple blogs, but its good enough to be repeated. 🙂 We have even made it for others and it always gets great reviews. I love recipes that are so easy and taste so good!
Creamy Spinach and Tortellini
Slightly adapted from Bombshell Bling
- 16 oz. refrigerated three cheese tortellini
- 2 tsp. minced garlic
- 1 1/2 cup fresh spinach, chopped
- 1 can diced tomatoes
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 tsp. basil
- 1 tsp. onion flakes
- 2 Tbsp. flour
- 1 1/2 cup half and half
- 1/4 cup grated Parmesan cheese
In a large pot, cook tortellini according to package directions. Heat a large skillet on the stove. Saute garlic for about 30 seconds. Add the spinach, tomatoes, salt, pepper, basil, and onion flakes. Heat until it starts to simmer. In a small bowl, whisk the flour and the half and half. Add to the skillet along with the Parmesan cheese. Cook until sauce has thickened a bit. When tortellini is finished, drain and toss with cream mixture.
