The other day my husband told me that I should make a blog completely dedicated to muffins, since I share so many recipes for them on here. Guess what…I’m sharing another one today! These Mini Chocolate Chip Muffins are so yummy.
And they’re mini. What is it about mini food items that make them taste so much better. I seriously have a child that will only eat muffins if they are in the miniature form. And mini marshmallows. I could eat them by the handful, but one normal sized marshmallow is enough for me. Strange, but true. I guess mini is just the way to go!
Another thing…you really don’t have to make these miniature. You can make them in a normal size muffin tin, just increase your baking time by a few minutes. And (don’t tell my son) they taste exactly the same. 🙂
Mini Chocolate Chip Muffins
Yield: 48 mini muffins or 24 regular-sized muffins (or make 24 mini muffins and 12 regular-sized, that is what we usually do)
- 1 1/2 cup flour
- 1 1/2 cup whole wheat flour
- 1 cup sugar
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 cup milk
- 2 eggs
- 1/2 cup melted butter
- 1 cup mini chocolate chips
Preheat oven to 350 degrees and prepare muffin tins by spraying with cooking spray or lining with cupcake liners. Mix together the flours, sugar, baking soda, baking powder, and salt. Add in milk, eggs, and melted butter. Stir until just combined. Fold in the mini chocolate chips. Fill muffin tins with batter and bake for about 15 minutes.
