Today is going to be the best day ever! I know because in just a few hours my wonderful husband graduates with his PhD and he is forever finished with his schooling! I am beyond excited! And there isn’t a better way to celebrate than to share with you one of our family’s favorite side dishes!
This Lemon Dill Jasmine Rice is so good! Whenever I make this recipe I always double it so that I can make sure to have extras for lunch the next day!
We love to eat this as a side dish to pretty much anything. We love it with the Balsamic Pork Tenderloin or with salmon. Oh, it makes me want to eat some right now! It really is so, so tasty!
Lemon Dill Jasmine Rice
Recipe adapted from Aroma Housewares
- 1 cup long grain Jasmine rice
- 1 3/4 cup water
- 1/2 tsp. salt
- zest of 1 lemon
- 1/2 tsp dried dill weed
- 1 tsp. parsley
- 2 Tbsp. butter, cut into pieces
We eat a lot of rice at dinner time in our home and I absolutely love my Zojirushi Rice Cooker (affiliate link). It’s obviously quite an investment, but believe me this rice cooker is AMAZING and makes the rice cook perfectly every time. If you are serious about rice I highly recommend getting one. My husband and I consider this one of best purchases we have ever made for our kitchen.
When I make this, all I do is put all the ingredients into the rice cooker and push the start button. Easy recipe right? If you want to cook it on the stove, I’m sure you just do the same thing (mix all the ingredients) and then cook the rice according to the directions on the package. If anyone tries this on the stove let me know how it works out!
