So, I am not much of a cookie baker. I certainly make cookies on occasion, although I don’t always like taking the time to make little individual cookies. But when cookies come in bar form…those are my favorite!
These Snickerdoodle Blondies are so tasty and they are so fast to make! We made them for our Family Home Evening treat and our whole family loved them. I especially love when I can make a recipe like this that I already have all the ingredients for and don’t have to shop for something special.
If you love Snickerdoodle cookies, you will love these bars!
Snickerdoodle Blondies
slightly adapted from here
Ingredients:
- 1 cup softened, unsalted butter
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 2 1/2 cup flour
Topping:
- 1/4 cup sugar
- 1 tsp. cinnamon
Preheat oven to 350 degrees and grease 9x 13 pan. In a mixer, cream together the butter, sugar, and brown sugar. Add eggs and vanilla, mix. Add the salt, baking powder, cinnamon, and flour and mix until well combined. Press into 9×13 pan. Sprinkle with cinnamon/sugar topping.
Bake for 25-30 minutes.

I am a cookie person.But only drop cookies and I have to have a dough scooper. If I have to roll them out it’s not happening. But these look so good I may be making them tonight as a pick me up after a rough day 🙂

My mother-in-law is a huge fan of Snickerdoodle cookies and these look even better than a regular cookie. I will most definitely have to try this recipe and score some extra brownie points with her!

I made these tonight and they were absolutely incredible.
I used parchment paper though, and it made it super easy to clean up! ( I just spray it with Trader Joes coconut oil spray and put the paper down.)
I got some nice crispy edges. SO delish. I went back for seconds.
