A couple of years ago, when I started making homemade breakfast more often, we mixed and matched numerous recipes to form this one. And it is the one that everyone loves! I probably say that a lot, but brown sugar cinnamon muffins really are the breakfast that everyone would eat everyday if we could!
They are sweet, whole wheat and I have to watch myself, so I don’t eat too many! I also pack them in our older kids’ lunches and apparently our daughter’s friend begs her split the muffin with her whenever our daughter brings one to school! 🙂

Brown Sugar Cinnamon Muffins
Makes 24 muffins
- 3 cups whole wheat flour
- 1 1/2 cup brown sugar, divided
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 4 eggs
- 1 tsp. vanilla
- 1/2 cup melted butter
- 1 1/2 cup milk
- 1/2 tsp. cinnamon
Preheat oven to 350 degrees and prepare 2 muffin tins by lining with cupcake liners or spraying with cooking spray.
Mix together the whole wheat flour, 1 cup of the brown sugar, baking soda, baking powder, and salt. Add in the eggs vanilla, melted butter, and milk and mix just until combined.
Spoon into prepared muffin tins, set aside. Mix together the remaining 1/2 cup of brown sugar and 1/2 tsp. cinnamon. Sprinkle evenly on each muffin.
Bake for 20 minutes.
