Leprechaun Chex Mix

Leprechaun chex mixLeprechaun Chex Mix is the perfect St. Patrick’s Day dessert! We made it for family home evening and it was a big hit! Especially with the littlest boys (they ate only the marshmallows)!

I love how colorful it is. It makes me dream of spring time! When is spring coming, by the way? All the cold here lately has made me think it is a long time away.

Leprechaun Chex Mix

  • 1 box of Lucky Charms cereal (I had a 16 oz. box and only had to use about 1/2 of it for this recipe)
  • 6 cups rice Chex cereal
  • 4 cups white chocolate chips
  • 1/4 cup rainbow sprinkles

First, pour out some of the cereal and pick out the marshmallows until you have 2 cups, set aside. In a large bowl, combine the Chex cereal and 2 cups of the Lucky Charms cereal (without any marshmallows). Then, pour the white chocolate chips into a microwave safe bowl and melt in the microwave for 2 minutes, in 30 second increments, stirring each time, until smooth. Pour the melted white chocolate chips over the cereal and stir to coat. Pour onto tray and sprinkle with rainbow sprinkles. After the mixture has cooled, break the mixture apart and add in the marshmallows.
