My son decided that these cookies were the ones that he wanted to make for his Valentine’s party at school. We decided that we better try them out beforehand to make sure they tasted as good as they look.
We changed the recipe slightly by adding half chocolate chips and half white chocolate chips. They were super easy to make. Just add everything in and bake them. Just make sure you don’t leave them in the oven too long, or they will look a little brownish (like mine do).
Pink Chocolate Chip Cookies

Makes about 2 dozen cookies
- 1 box strawberry cake mix
- 1 tsp. baking powder
- 2 large eggs
- 1/3 cup canola oil
- 1/2 tsp. vanilla
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup white chocolate chips
Preheat oven to 350 degrees. Mix together the cake mix, baking powder, eggs, oil, and vanilla. Fold in both types of chocolate chips.
Drop round balls of dough, 2 Tablespoon size, onto cookie sheet and bake for 10 minutes.
The verdict: They were very tasty and hope his 2nd grade class loves them as much as we have!
Update: On our second round of these cookies, we made sure not to cook them as long and they turned out perfect. Even more pink than before! Our son’s class loved these cookies! He said that everyone was asking if they could have more! We only brought enough for one cookie per person (because the kids are getting plenty of treats on Valentine’s Day :)), but I’m sure if we had brought more they would have gobbled them up in no time!
