S’more Cookie Cups

Well, here I am again! I have taken a couple of months off from blogging, and hopefully I will get in a better routine, although I can’t make too many promises until school starts again. I always think of summer as so relaxing, and it is more relaxing than the school year, but it’s still so busy! We have been spending a ton of time this summer attending soccer camp, swimming lessons, and completing lots of yard and house work. So today, I thought I’d share with you a new recipe for S’more Cookie Cups that we found and absolutely love! If you enjoy s’mores, then you will love these cookies! 😀

S’more Cookie Cups


slightly adapted from Six Sisters’ Stuff


Ingredients:

  • 6 graham crackers, crushed
  • 1 1/2 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 6 large marshmallows, cut in half
  • 1 chocolate bar (divided into 12 small chocolate pieces)

Directions:

Preheat oven to 350 degrees and spray regular sized muffin tin with cooking spray. In the bowl of your mixer, combine butter and sugars. Mix until smooth. Add in egg and vanilla and mix. In a separate bowl, mix graham cracker crumbs, flour, baking soda, and salt. Slowly add dry ingredients into the butter sugar mixture and stir until combined. Press dough into the 12 muffin cups in your prepared pan and then make a small indentation in each cookie cup with a spoon.

Bake for 16 minutes or until golden brown. Right when you take them out of the oven, gently press the marshmallow halves onto the cookies with the sticky side down. Cool completely. When cookies are cool, broil for just a minute or so until the marshmallow is golden brown. Watch them carefully. You don’t want to burn your marshmallows! Then place the chocolate pieces on top of the marshmallows.
