Tomorrow is St. Patrick’s Day! Lucky for you these Rainbow Treats are super easy and super delicious, so you can whip them up really quick to help celebrate St. Patrick’s Day! We have had fun this St. Patrick’s Day season with our Leprechaun on the Ledge and eating our Striped Shamrock Jello. Holidays with kids are just so much fun!

I made these Rainbow Treats for my kids just yesterday and they were completely gone within the first 10 minutes of them walking in the door from school. They, apparently, loved them!

Rainbow Treats


Ingredients:

  • 4 cups Mini Trix Cereal (affiliate link)
  • 2 cups Rice Krispie Cereal (affiliate link)
  • 4 cups miniature marshmallows (or use about 40 regular size marshmallows)
  • 3 Tblsp. butter

Mix together the Mini Trix cereal and the Rice Krispie cereal in a large bowl. Set aside. Melt the miniature marshmallows and the butter on medium-low heat in large saucepan. Or you can melt them in the microwave even faster (in microwave safe bowl combine butter and marshmallows, cook for 2 minutes, stir, cook for 1 more minute). Pour marshmallow mixture over top of cereal, stir to combine, and then press into a 9×13 baking dish. Let them cool and then eat!
