Cinnamon Breakfast Cake at DoingSplendid.comI have always loved breakfast cake. I’m pretty sure it was my favorite breakfast food growing up. My mom would sometimes make it for us on the weekends and my grandma or my aunt made it on the weekdays. I have great memories of eating breakfast cake with my family as I was growing up.

After I had kids of my own, I wanted to make breakfast cake for them too, (who am I kidding…its mostly for me!:) ) but I didn’t always have Bisquick to make the same recipe as all the wonderful ladies in my life had, so we had to find another way. We found this recipe, made a few changes to make it more like my childhood breakfast cake, and we’ve been using it ever since.

Nothing special to buy for this one! And my kids devour it. Every single time I make it! Even the pickiest of picky eater at my house loves this recipe the most.

Cinnamon Breakfast Cake

Ingredients:

Cake

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 3/4 cup milk
  • 2 tsp. vanilla

Topping

  • 1/4 cup all-purpose flour
  • 2/3 cup brown sugar
  • 1 tsp. cinnamon
  • 1/4 cup butter

Directions:

Preheat oven to 350 degrees and spray 9×13 pan with cooking spray. First we’re going to mix together the cake part. Mix together both cups of flour, sugar, baking powder, and salt. Add in melted butter, egg, milk, and vanilla and stir until combined. Pour batter into prepared 9×13 pan, set aside.

In a separate bowl, mix together all topping ingredients until crumbly. Sprinkle over top of batter. Bake in preheated oven for about 25 minutes.
