When I was young, we always went to my grandma and grandpa’s house for Christmas morning breakfast. We always had waffles, sausage, bacon, and eggs. My grandma or one of my other relatives would make the eggs however we wanted them, scrambled, fried, however we liked.
This year for Christmas, I decided I wanted to continue making this traditional breakfast for my little family. We had waffles and sausage, but to simplify the making of the eggs a little bit, I decided this Sausage Breakfast Casserole would be wonderful. And it was!
I made it all the night before, so it was easy to just put in the oven in the morning and was ready for us to eat by the time our children were finished opening their gifts.
Sausage Breakfast Casserole

- 1 pound sausage
- 1/4 cup diced onion
- 1/2 cup diced green pepper
- 4 cups frozen, shredded hash browns
- 8 eggs
- 1 1/4 cup milk
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 cups shredded cheese (cheddar or Colby jack would both taste great)
Grease a 9×13 baking dish. Put frozen hash browns into the baking dish. Brown sausage in a frying pan and then transfer to baking dish. Using the same frying pan, cook the onion and green pepper until tender. Add to baking dish and then mix together well and spread evenly. In separate bowl, beat eggs, milk, salt, and pepper. Pour over hash brown/sausage mixture in your 9×13 baking dish. Sprinkle with 2 cups of shredded cheese. Cover and refrigerate overnight.
In the morning, preheat oven to 350 degrees and then bake the casserole for 55 minutes or until eggs are set up.
