Is everyone up for more celebrating?! On Monday, I talked about all the things we have done to celebrate my husband earning his PhD and here is another! I made this purple popcorn for his graduation party too!
One of the great things about this purple popcorn is that it can be made in any color you want. When I was little my mom made my sisters and I this popcorn, but in pink! I remember taking it in little plastic bags to my kindergarten class on my spotlight day. Oh, this popcorn brings back such great memories!
Anyway, it is so good and lots of people at the party seemed to love it! I know I did and ate way too much of it! Are you ready for the recipe?!

- 2/3 popcorn kernels, popped
- 2 cups granulated sugar
- 2/3 cups half and half
- 1 Tbsp. light corn syrup
- 1/4 tsp. salt
- 1 tsp. vanilla
- 6 drops food coloring (any color you want!)
Pour popped popcorn into a very large mixing bowl (you can separate it into two bowls if you would like). In a large saucepan, stir together the sugar, half and half, corn syrup, and salt. Stir constantly over medium heat until the sugar has dissolved. Heat mixture to 232 degrees and immediately remove from heat and add the vanilla and food coloring. (I don’t have a candy thermometer, so I just boiled the mixture for about a minute, removed from heat, and added the vanilla and food coloring. I don’t know if that is right, but it still tasted great!) Then drizzle the mixture over the popped popcorn and stir to coat. Pour the popcorn onto wax paper and let it dry.
And then eat it! I know I can’t resist it for long! You can store any that you have left in an airtight container.
