I found this Chicken Enchilada Stuffed Peppers recipe through Pinterest on one of my favorite craft blogs, Sugar Bee Crafts, and we decided to try it out. It was really good, but my husband thought the chicken mixture would taste even better just on rice instead of stuffed in the peppers. So we tried that out and…this delicious Chicken Enchilada Rice Bowl was discovered!
It has fast become one of our favorite dinners. I am not usually one to experiment very much with recipes, but this one worked! Maybe I’ll have to experiment with recipes a little more often.
Chicken Enchilada Rice Bowl
Inspired by this recipe
- 1 cup cooked and shredded chicken
- 1 can black beans, drained and rinsed
- 1 zucchini, diced
- 1 red pepper, diced
- 1/2 cup salsa
- 1 cup green enchilada sauce
- 1 cup of shredded cheese (we use Monterrey Jack and it is very good)
- Cooked rice
In a large pan on the stove, combine the chicken, beans, zucchini, red pepper, salsa, and enchilada sauce. Cook over medium heat for about 10 minutes or until heated through. Add the cheese. Serve over the rice.
