This is definitely our go-to pancake recipe! We love it, it’s easy and fast to make, and you can add to it and change it anyway you want!
I absolutely love the happy smiles I get whenever I tell the kids we are having pancakes for breakfast. I guess we have them just often enough that it is still a special treat for them. This is for sure the most requested breakfast item for birthdays and other holidays.
On their birthdays, we have added sprinkles, to make them look more festive, stacked them on a plate, and added a candle for them to blow out. They love that!
For Christmas, we made our pancakes into snowmen and reindeer. We’ve changed the color of them for Valentine’s Day and St. Patrick’s Day. For Easter, we’ve had build-your-own-bunny-pancake breakfast. We set out different toppings and the kids can make their own pancake bunny and play with their food! My kids are all for that sort of breakfast!
Oh, and this pancake recipe is so easy, that it was the first recipe that our daughter mixed up and cooked all by herself! I was so proud of her!
On regular weekdays, I often switch out the all-purpose flour for whole wheat flour for a healthy and filling breakfast. It tastes great too! I also usually double the recipe to feed our family of 6 (and sometimes I feel like we need to even make more!)

Our Favorite Pancakes
- 1 1/2 cup flour
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. sugar
- 1 1/4 cup milk
- 1 egg
- 3 Tbsp. butter, melted
Mix together all the dry ingredients in a large bowl. Then pour in the milk, egg, and melted butter and mix until smooth. Pour batter, 1/4 cup for each pancake, onto a hot griddle or frying pan. Brown on both sides and serve warm with your favorite pancake toppings. We usually use regular maple syrup, but fruit and cream or, my personal favorite, sprinkled with sugar and rolled up, all sound great right now!
